Peas and Pancetta Recipe

This Italian side dish is simple to make and takes little time put together. The food tastes great hot or cold.

– 1 tablespoon olive oil – 4 ounces pancetta, diced – 1 large shallot, peeled and sliced thin – 16 ounce bag frozen pea – kosher salt and pepper to taste

Set the pan on medium heat and add the olive oil. Put in the sliced shallots and diced pancetta.

Cook for about 5 minutes, until the shallots are browned and the pancetta is crispy.

Add peas, whether they are cold or thawed. Keep cooking until the peas are warm all the way through. Add pepper and salt.

If pancetta is unavailable, use sliced prosciutto or bacon. Can replace thinly sliced onion for shallot.
