Old-Fashioned Pecan Pie

– 1 1/4 cups all-purpose flour – 1/2 tsp salt – 1/2 cup cold unsalted butter, cut into cubes – 3-4 tbsp ice water For the Filling: – 1 cup granulated sugar – 1 cup light corn syrup – 3 large eggs – 1 tsp vanilla extract – 2 tbsp unsalted butter, melted – 1 1/2 cups pecan halves

Prepare the Pie Crust: In a large mixing bowl, combine the flour and salt. Add the cold butter cubes and use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together.

Preheat the Oven: Preheat your oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface into a circle slightly larger than your pie dish. Carefully transfer the dough to the pie dish and gently press it into the bottom and up the sides.

Prepare the Filling: In a mixing bowl, whisk together the granulated sugar, light corn syrup, eggs, vanilla extract, and melted butter until smooth and well combined.

Add Pecans: Arrange the pecan halves in an even layer over the bottom of the chilled pie crust. You can arrange them in a decorative pattern or simply scatter them evenly.

Pour Filling Over Pecans: Pour the prepared filling over the pecans in the pie crust, making sure to evenly distribute it.

Bake the Pie: Place the pie dish on a baking sheet to catch any drips and transfer it to the preheated oven. Bake for 50-60 minutes, or until the filling is set and the crust is golden brown.
