MEXICAN STREET CORN RECIPE

Ingredients

– 4 ears of corn, husked – 1/4 cup mayonnaise – 1/4 cup sour cream – 1/2 cup cotija cheese, crumbled – 1 teaspoon chili powder – 1/2 teaspoon smoked paprika – 1/4 cup chopped fresh cilantro – 1 lime, cut into wedge – Salt and pepper to taste

Preheat your grill to medium-high heat. Grill the husked ears of corn, turning occasionally, until they are charred and cooked through, about 10-15 minutes.

In a small bowl, mix together 1/4 cup of mayonnaise and 1/4 cup of sour cream until well combined.

Sprinkle 1/2 cup of crumbled cotija cheese generously over the coated corn, pressing gently to help it adhere to the mayonnaise mixture.

Sprinkle 1 teaspoon of chili powder and 1/2 teaspoon of smoked paprika evenly over the corn. Add salt and pepper to taste.

Sprinkle 1/4 cup of chopped fresh cilantro over the corn for a fresh, herbal note.
