Maple Roasted Carrots Recipe

This simple maple roasted carrots recipe adds flavour with creamy feta, crunchy walnuts, and sweet and tangy dried cranberries! Your family will love this upgraded veggie side!


Roasted Carrots: – 2 lbs large carrots cut into ¼-inch diagonal – 2 Tbsp unsalted butter melted – 1 Tbsp avocado oil – 2 Tbsp pure maple syrup – ½ tsp sea salt to taste For Serving: – ½ cup feta cheese crumble – ¼ cup dried cranberries – ¼ cup toasted walnut – 2 Tbsp fresh parsley finely chopped


Start with a large baking sheet and a 420-degree oven. Scrub carrots thoroughly to remove dirt. Slice carrots diagonally into ¼-inch thick slices using a sharp knife.

Step 1

In a large bowl, combine carrots, melted butter, avocado oil, pure maple syrup, and sea salt. Mix all ingredients until carrots are coated.

Step 2

Place the carrots in a single layer on the baking sheet, including any liquid. Carrots should be golden brown after 18–22 minutes. 

Step 3

After cooling on the roasting pan, spatula carrots into a large serving bowl. Thicker carrot slices take 20 minutes, thinner 15 minutes.

Step 4

Mix carrots with feta, dried cranberries, walnuts, and parsley. Enjoy maple-roasted carrots with your main!
