Italian Almond Chocolate Cookies Recipe

Gluten-free Italian Almond Chocolate Cookies are mildly sweet and delicious. Great with coffee or espresso on holidays.

– 2 ¼ cups almonds, finely ground (about 12 ounces) – ⅔ cup sugar – ¼ cup cocoa powder, sifted – 1 teaspoon baking powder – 2 large eggs, beaten – 1 teaspoon vanilla extract – ½ teaspoon almond extract – ¼ cup powdered sugar

Warm the oven up to 325 degrees. Protect or a baking mat should be used to line a baking sheet. Set it away.

Chop and combine almonds in a food processor. Finely grind the almonds like flour.

Mix sugar, cocoa powder, baking powder, and ground almonds in a large basin with a whisk. Mix eggs, vanilla, and almond extract until completely combined.

In a small bowl, add sugar powder. Use a smaller cookie scoop to make 1-inch dough balls. Make dough balls. Sprinkle ball with sugar.

On a baking sheet, space cookies 15 mm apart. Put the cookies in the oven for 12 to 14 minutes, or until they are just set.

Cool for 5 minutes in the pan, then move to a wire rack to cool all the way through.
