Cream Cheese Swirl Brownies

Preheat your oven to 350°F (175°C). Grease and flour a 9x9-inch baking pan, or line it with parchment paper.

In a medium-sized microwave-safe bowl, melt the butter in the microwave in 30-second intervals until completely melted.

– To the melted butter, add 1 cup of granulated sugar, stirring until well combined. Then, add the 2 eggs and 1 teaspoon of vanilla extract, mixing until smooth.

In a separate bowl, sift together the cocoa powder, all-purpose flour, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined. Be careful not to overmix.

In another bowl, beat the softened cream cheese until smooth. Add in the 1/4 cup of granulated sugar and egg yolk, and beat until creamy and well combined.

Pour about two-thirds of the brownie batter into the prepared pan, spreading it evenly. Then, spoon the cream cheese mixture over the brownie batter layer. Use a knife or toothpick to gently swirl the cream cheese into the brownie batter.

Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake.
