– 4 bone-in pork chops, about 1-inch thick – 2 tablespoons olive oil – Salt and pepper, to taste – 1 teaspoon garlic powder – 1 teaspoon paprika – 1/2 teaspoon dried thyme – Optional: fresh herbs (such as rosemary or thyme) for garnish

Preheat your oven to 400°F (200°C). Pat dry the pork chops with paper towels and season generously with salt and pepper on both sides.

In a small bowl, combine 1 teaspoon garlic powder, 1 teaspoon paprika, and 1/2 teaspoon dried thyme.Sprinkle the seasoning mixture evenly over both sides of the pork chops, pressing gently to adhere.

Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side until nicely browned.

Transfer the skillet with the seared pork chops to the preheated oven. Bake for 10-15 minutes, or until the internal temperature reaches 145°F (63°C) for medium rare to medium doneness.

Remove the pork chops from the oven and let them rest for 5 minutes before serving. Garnish with fresh herbs if desired, and serve hot.
